This is not a cooking show. It's a real kitchen — wood-fire stove, metate, and recipes that have been passed down for centuries. We start in the markets of the historic center: chapulines, quesillo, chocolate, mole negro. Then we head to a Zapotec family's home and cook together. You'll leave with a full stomach, a recipe book, and an understanding of why Oaxaca is Mexico's food capital.

Mercado Benito Juárez
An introduction to Oaxaca's pantry: dried chiles, hierba santa, chocolate, quesillo. We explain what everything is and why it matters.

Mercado 20 de Noviembre
Your first real bite — tasajo and chorizo oaxaqueño from the carbon grill. If you're brave: chapulines. Fried grasshoppers. Don't knock it 'til you try it.

Street food walk
Quesillo pulled fresh from the wheel. Tejate — the ancient pre-Hispanic chocolate drink served cold. Chocolate caliente. Two very different ways to taste the same ingredient.

Cooking class — 3 to 4 hours
At a Zapotec family's home. Tortillas by hand on the comal. Mole negro from scratch: toasting the chiles, grinding the paste. You cook it. You eat it.

Lunch
What you just made, with a mezcal aperitivo. This is the best meal of the trip.
